Holiday tables are usually a beige parade of stuffing, rolls, and potatoes…with a lonely scoop of vegetables hiding in the corner. These healthy holiday vegetable sides change that.
This week, I’m featuring two of my own holiday dinner–friendly recipes that fit the high-fiber, high-flavor, Healthy AF brief without tasting “healthy”: a healthier green bean casserole and garlic Parmesan roasted carrots that actually earn their spot on the table.
Healthier Green Bean Casserole (No Canned Soup)
If “green bean casserole” makes you think of a gloopy dish made with mystery canned soup, this version is your glow-up. This healthier green bean casserole keeps the classic cozy flavor but skips the canned cream-of-anything. You still get the creamy sauce and crunchy topping, but with fresher ingredients that play nicer with your blood sugar and energy.
It’s designed to pair with your protein so your plate is more balanced and doesn’t feel like a “diet plate.”
Ingredients
For the topping
- 1/2 cup panko breadcrumbs, regular or whole wheat
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons garlic, minced
- 2 tablespoons extra-virgin olive oil
For the casserole
- 2 lbs green beans, trimmed and cut into 2″ pieces
- 2 tablespoons butter, for frying
- 8 oz brown mushrooms, sliced
- 1 large onion, thinly sliced
- 1/4 teaspoon dried thyme
- 1 teaspoon salt, plus more for cooking the beans
- 1/2 teaspoon ground black pepper
- 4 tablespoons flour (whole wheat, all-purpose, Fit Flour, or gluten-free)
- 2 1/4 cups low-fat or skim milk
- 1 tablespoon soy sauce or coconut aminos
Instructions
- Make the topping.
In a medium bowl, add the panko breadcrumbs, Parmesan cheese, garlic, and olive oil. Stir to combine and set aside. - Prep the baking dish.
Preheat the oven to 375°F. Spray a 9×13 baking dish with cooking spray and set aside. - Blanch the green beans.
Bring a large pot of salted water to a boil. Add the green beans and cook just until crisp-tender, about 3 minutes. Transfer to an ice bath to stop the cooking. Drain and set aside. - Cook the mushrooms.
Preheat a large skillet over medium heat and add 1 tablespoon of butter. Add the mushrooms and sauté for about 5 minutes, stirring occasionally, until they release their liquid and start to brown. Transfer to a bowl. - Cook the onions.
In the same skillet, melt the remaining 1 tablespoon butter. Add the onions and sauté for about 5 minutes, stirring occasionally, until softened and lightly golden. - Build the sauce.
Return the mushrooms to the skillet with the onions. Sprinkle in the thyme, salt, pepper, and flour. Stir to coat the vegetables.
Reduce the heat to low and slowly add the milk in small increments, stirring as the mixture thickens. Add the soy sauce or coconut aminos. Continue cooking for about 5 minutes, until the sauce resembles a thick gravy. - Assemble the casserole.
Add half of the green beans to the prepared baking dish and top with half of the sauce. Repeat with the remaining green beans and sauce. Sprinkle the breadcrumb–Parmesan topping evenly over the casserole. - Bake and serve.
Bake uncovered for 25 minutes, until the topping is golden and the sauce is bubbling. Remove from the oven and let stand for 10 minutes before serving.
Garlic Parmesan Roasted Carrots
If you want a high-fiber holiday side dish that people actually fight over, these garlic Parmesan roasted carrots are it. They’re salty, garlicky, cheesy, and caramelized at the edges—aka the opposite of sad, soggy vegetables.
They’re also only 5 main ingredients, which is exactly the energy we want for busy holiday cooking.

Ingredients
- 12 oz (350 g) carrots, peeled
- 2 tablespoons salted butter, melted
- 2 cloves garlic, minced
- 3 tablespoons grated Parmesan cheese
- 1 teaspoon chopped parsley
Instructions
- Preheat the oven.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. - Season the carrots.
Mix the melted butter and minced garlic together. Arrange the carrots on the prepared baking sheet and drizzle with the garlic butter mixture, tossing to coat. - Roast and add Parmesan.
Roast for 15 minutes. Remove the pan from the oven and sprinkle the Parmesan cheese evenly over the carrots. - Finish roasting.
Return the pan to the oven and roast for an additional 10 minutes, or until the cheese is melted, lightly browned, and the carrots are tender with caramelized edges. - Garnish and serve.
Remove from the oven, sprinkle with chopped parsley, and serve immediately.
How to Build a Healthier Holiday Plate with These Sides
Drop these healthy holiday vegetable sides next to your turkey, ham, or prime rib and you’ve got a plate that’s:
- familiar enough that nobody complains
- high-fiber and flavorful enough that you’re not raiding the dessert table an hour later “just to see what’s left”
